Marinated cold beef

I have been craving this beef we usually ate at my mom’s house and it’s called carne fría “cold beef”, I haven’t been able to make it before because I wasn’t sure what type of beef I should use, the beef cuts in USA are really different from Latin America. After some research I found out I need to use Round Eye Beef. This recipe is really easy but must be prepared at least 8 hours before eating it. The longer you leave the beef marinating it will more tender and yummier. 

Cook the meat for about an hour in a pressure cooker with salt, pepper and garlic (follow instructions of the pressure cooker), if you do not have pressure cooker you can cook in a large deep pot, add water until it covers twice the volume of the meat, bring it  to a boil, then cover and leave cooking on medium-low heat until it is easy to introduce a toothpick. Let it come to room temperature and cut into thin/ medium slices of about 1/4 or 1/2 inch.

Chop onion and cilantro and mix all the ingredients in a bowl.

Place the slices of meat in a baking dish, pour the vinaigrette. Cover with plastic and store in the refrigerator for at least 5-6 hours.

Ingredients
  1. Round Eye Beef
  2. Pinch of Salt
  3. 1 tbsp black pepper
  4. 1 garlic clove chopped
Marinade
  1. 1 cup chopped onion
  2. 1/2 cup chopped cilantro
  3. 2 cups of broth from the cooked beef. (Skim the scum off with a fine mesh strainer)
  4. 1/2 cup white vinegar
  5. 1 tbsp of salt
  6. 1/2 tsp black pepper
