- 1 can full-fat coconut milk (13.5-ounce)
- 1 tsp vanilla extract or half vanilla bean seeds
- 4 tbsp sugar
- pinch salt
- 1/3 cup finely shredded unsweetened coconut
In a medium saucepan heat up but don't boil coconut milk, sugar and vanilla, cook until sugar dissolves about 4 minutes.Pour hot coconut milk mixture in a bowl with coconut flakes. Mix well and let it stand to cool completely.Once it's cooled, divide the mixture among the popsicle molds and try to get even amount of coconut shavings and milk.
