Parmesan chicken Sandwich

This is a really easy recipe, perfect to make when you have chicken leftovers or for a casual dinner.

Preheat oven to 350 degrees F (175 degrees C).

Beat 1 egg in a shallow bowl, you could use olive oil instead of egg.  In a separated dish, mix 4 tablespoons of  breadcrumbs, 2 tablespoons grated parmesan cheese, 1 tablespoon of flour, salt and pepper.

Lightly grease a baking dish. Dip each chicken breast in the egg, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish

Bake for 20- 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear. Instead of baking you could also cook in oil the chicken in an a large skillet over medium heat for 4-5 minutes on each side or until no longer pink.

Place the chicken and cheese on bun bottoms and toast until cheese is melted.

Add fresh spinach, fresh basil leaves or lettuce.

Heat the marinara sauce, spread in sandwich or place it in bowl to dip the sandwich. Enjoy!
