Hibiscus Mint popsicle recipe

A couple of months ago I try The Good Pop Hibiscus popsicles at HEB  as soon as I tried them, I knew I had to re create that Hibiscus and Mint Popsicle recipe. It was one of the most refreshing popsicles I have tried, it was not a regular hibiscus popsicle. The mint gives the popsicle a super refreshing flavor. I fell in love with the combination.

 I bet you have had before hibiscus tea or Hibiscus Agua Fresca, if you haven´t, you are missing a lot! The hibiscus flower is known for its refreshing red color  and vitamin C content. You can buy it any Latin American grocery store. It´s super easy to make tea or agua Fresca. You jut need to bring to boil the dried hibiscus flower with water and a little bit of sugar. 

If you haven´t had it before and see it on a mexican  restaurant please be aware that it might not taste the same as making it in your house!

Making Poposicles Smooth

One of the most frequent problems when making popsicles, it’s that as soon as you freeze it, it becomes really hard like a solid brick of ice and loses the rich and smooth texture. 

There are several ways to make the popsicles smoother, one of them is using lots of sugar. The other one I just discover is using a little bit of unflavored gelatin. Adding a small amount of gelatin will prevent to become hard like a solid brick of ice .

I finally purchase a good pop maker, my previous ones were made with cheap plastic. Making popsicles during summer has become a tradition in my house, specially this Hibiscus mint and the coconut milk ones. So I really need to get a good pop maker, the ones I used before were  individual containers, they were quite difficult to manage. Love how easy the popsicles come out from this new container and they look just like the real deal.

Hibiscus flower popsicle

Hibiscus Mint popsicle recipe

Servings 8

Ingredients
  

  • 1/2 tsp unflavored gelatin
  • 1/2 cup sugar
  • 1/4 cup water to dissolve the gelatin
  • 1/2 cup dried hibiscus flowers
  • 2 1/2 cups water
  • 2 tbsp mint

Instructions
 

  • Dissolve the gelatin with the 1/4 cup of water for at least 5 minutes it will become jelly-like mass. 
    2. Bring the water and sugar to a boil in a saucepan, stirring to dissolve sugar.
    3.Add the hibiscus flowers and mint to the saucepan turn off the heat and let the mixture steep 2 minutes. 
    4.Microwave the gelatin mixture for 8 seconds or until melts and dissolve it with the saucepan mix. Let the mixture steep 15 minutes and up to 1 hour for a stronger color and flavor.
    5. Once it's cooled, divide the mixture among the popsicle molds about 6 mid size popsicles. Let it freeze for at least 4 hours.
